The producers of the original Prosecco would like to make sure that wine lovers and word lovers alike know that the newly minted definition—“a sparkling Italian wine”—is just the beginning of the story. Authentic Prosecco is produced in a well-defined area in northeastern Italy known as Conegliano-Valdobbiadene by producers who comply with strict regulations governing the growing area, grape content and production method. Producers in other parts of the world use the “prosecco” designation on their label, but the wine is not the same.
